Full Answer

Make baked potato casserole by scrubbing and baking 1 1/2 pounds of red potatoes in the oven. Then remove the potatoes, and cut them in cubes. Spread half the potatoes on the bottom of a baking dish, and season with salt and pepper. Sprinkle 1/2 pound of crumbled cooked bacon on top of the potatoes. Spread 1 1/2 cups of sour cream over the bacon, and sprinkle with 1 cup of shredded mozzarella cheese and 1 cup of shredded cheddar cheese. Repeat all the layers, and bake at 350 degrees for 20 to 25 minutes. Serve topped with two diced green onions.

Another way to make baked potato casserole is to peel 10 large russet baking potatoes after baking them, and mash them with 8 tablespoons of butter, 1 cup of sour cream, 1/2 cup of heavy cream, 2 teaspoons of salt and 1 1/2 teaspoons of black pepper. Stir in 3/4 pound of crumbled cooked bacon, 1/2 pound of cubed sharp white cheddar cheese, 1 2/3 cups of grated mild cheddar cheese, 3 beaten eggs and 1/2 cup of diced green onions. Spoon the mixture into a casserole dish, and sprinkle with 1 2/3 cups of grated mild cheddar cheese. Bake at 375 degrees Fahrenheit for 35 to 40 minutes.
