Another way to make baked potato casserole is to peel 10 large russet baking potatoes after baking them, and mash them with 8 tablespoons of butter, 1 cup of sour cream, 1/2 cup of heavy cream, 2 teaspoons of salt and 1 1/2 teaspoons of black pepper. Stir in 3/4 pound of crumbled cooked bacon, 1/2 pound of cubed sharp white cheddar cheese, 1 2/3 cups of grated mild cheddar cheese, 3 beaten eggs and 1/2 cup of diced green onions. Spoon the mixture into a casserole dish, and sprinkle with 1 2/3 cups of grated mild cheddar cheese. Bake at 375 degrees Fahrenheit for 35 to 40 minutes.
