Mix together in a bowl, then form the mixture into balls, and place on a cookie sheet. Freeze the balls for one hour. Optional additional ingredients include toasted coconut, chia seeds and flax seed. Also, semi-sweet chocolate chips can be substituted with cinnamon chips, butterscotch or white chocolate chips. Instead of peanut butter, you can also use almond butter, sunflower-seed butter, cashew butter or any other types of nut butters. For a vegan version, use cacao nibs instead of chocolate chips and agave instead of honey.
Other variations of the no-bake energy bite include cranberry-pistachio energy bites, Almond-Joy energy bites, Nutella energy bites and trail-mix energy bites. Cranberry-pistachio energy bites consist of cranberries, shelled pistachio nuts, chopped dates, chia seeds and flax seeds combined with honey, salt, old-fashioned dry oats, and white chocolate chips. Almond-Joy bites consist of almonds, coconut flakes and dates mixed with unsweetened cocoa powder, sea salt, vanilla extract and almond milk.
