To make bacon-wrapped stuffed banana peppers, remove the top of the peppers and make a slice down one side, then remove the seeds. Fill the peppers with cream cheese and any other ingredients, then wrap with bacon slices. Use a toothpick to hold the bacon in place and prevent the peppers from falling apart during cooking, then grill or bake until the bacon is done.
Alternatively, scoop the seeds out without slitting the pepper, then use a small spoon to put the cheese mixture in the cleaned pepper. While the filling can be simply cream cheese, mixing in other cheeses, such as shredded cheddar or mozzarella, add further flavor to the filling. Seasonings to taste help make the peppers better match the rest of a meal, while minced vegetables, such as tomatoes, garlic and onion, add texture and color to the filling. For extra spice, dice jalapeños to add to the mixture.
Thicker strips of bacon hold together better during wrapping, making the process quicker and easier, while also providing a more distinct flavor. To avoid burning the toothpicks, especially when cooking over fire, soak them in water before using them with the peppers. Softening the cheeses before trying to mix them makes mixing easier and ensures a smoother, more consistent mixture.
