To make a delicious apple crisp, peel and slice 4 cups of tart cooking apples and spread them into a greased 8-inch square baking pan. Mix together 3/4 cup packed golden brown sugar, 1/2 cup each of flour and old-fashioned oats, and 3/4 teaspoon each of ground cinnamon and nutmeg. Cut in 1/3 cup softened butter or margarine until the mixture is crumbly, and sprinkle it over the apples. An apple crisp variation is baked apples with crisp topping. Cut 2 cooking apples across the center, stem side up. Cut out the cores using a melon baller to create a round hole. Sprinkle lemon juice on cut portions of each apple and place 1 tablespoon of strawberry preserves into each hole. Mix together 2 tablespoons flour, 3 tablespoons brown sugar, 1/2 cup uncooked oats, 1/4 teaspoon ground cinnamon and 3 tablespoons cold butter. Press the mixture onto the top of each apple to cover the jam, and bake the apples in a dish filled with 1/4 inch water for 35 minutes at 350 degrees Fahrenheit.
