The pistachio-covered cheese logs require an 8-ounce package of cream cheese, 1 cup each of grated sharp white cheddar and shelled unsalted pistachios, 1 tablespoon of mustard and 1 teaspoon of Worcestershire sauce.
To make the pistachio-covered cheese log, combine the cream and cheddar cheeses, mustard and the Worcestershire sauce in a medium sized mixing bowl. Season the mixture with salt and pepper to taste. Cover the bowl with plastic wrap and leave it in the refrigerator for 1 to 2 hours.
Roast the pistachios in a skillet over medium heat for about 7 minutes until they are golden brown and fragrant. Transfer the nuts to a plate, and allow them to cool. Remove the cheese mixture from the refrigerator, and place it on a piece of wax paper. Form the cheese into a log, and cover it with the roasted pistachios. Press the nuts into the cheese using the wax paper.
Cover the cheese log with another piece of wax paper and chill it for 1 to 2 hours in the refrigerator until it is firm. The cheese log can be made up to a day before it is to be eaten. Serve the appetizer with crackers.
