To make 7-Up cake from scratch, combine 3 sticks of butter, 3 cups of sugar, 5 eggs and 3 cups of cake flour. Add 1/2 cup of 7-Up soda, 1 tablespoon of lemon flavor, and 1 tablespoon of vanilla flavoring. Bake at 350 F for one hour and 15 minutes.
To make a slightly different recipe with a lemon-glaze, first preheat the oven to 350 F. Cream together 3/4 pound of softened butter with 3 cups of granulated sugar for 20 minutes. Beat 5 eggs into the butter and sugar mixture, then stir in 3 cups of flour and 2 tablespoons of lemon extract until well blended. Fold in 3/4 cup of 7-Up, or any lemon-lime soda you prefer, and pour the mixture into a greased 12-cup Bundt or tube pan. Bake the cake anywhere from one hour to one hour and 25 minutes.
While the cake is baking, prepare the lemon-glaze topping. To make the glaze, mix 2/3 cup powdered sugar and 1 tablespoon of lemon juice together in a small bowl. Once the cake is baked and cooled, use a spoon to drizzle the glaze over the top of the cake. If extra glaze is desired, simply double the glaze recipe.
