The main ingredients for a chicken quesadilla are tortillas, chicken, cheese , and onions or peppers. An easy recipe for chicken quesadillas calls for 2 tablespoons olive oil, 2 pounds of chicken breast, a large onion and 3 sliced sweet peppers.
In addition, the recipe also calls for 12 tablespoons butter, cajun or taco seasoning, 12 flour tortillas and 2 1/2 cups of Monterey Jack cheese. To make these quesadillas, heat the chicken in olive oil, sprinkling it with the cajun seasoning, salt and pepper beforehand. Brown the chicken, and then remove it from the heat. Cube the chicken into small pieces. Throw the sliced peppers and onion into the skillet to sauté them with the remaining olive oil.
In a separate skillet over medium heat, put 1/2 teaspoon of butter in the pan, and then lay a tortilla over it. Put a layer of cheese over the tortilla, and then layer the chicken and vegetables. Put another layer of cheese over these and then another tortilla. After the bottom tortilla is golden brown, flip the quesadilla over to fry the other side, and add more butter to the pan as you flip the tortillas. Cut the quesadillas into wedges to serve them, and pico de gallo or another salsa is recommended for dipping.
