Seven-layer pea salad is a classic potluck dish and the perfect complement to a number of main dishes, especially simple cookout fare, such as BBQ pork or brisket, grilled steak and smoked chicken. It also makes a good side dish for fried chicken and baked ham.
The historically Southern dish pairs well with both hot and cold meats and is a favorite for picnics and Easter dinner. Seven-layer salad is traditionally a fresh mix of lettuce, peas, hard-boiled eggs, celery, tomatoes, bacon and cheese, with a mayonnaise-based dressing. It is easy to adjust the ingredients in the versatile salad to suit personal tastes. Green onion, spinach, bell pepper and fresh herbs are just a few possible additions or substitutions. The dressing can also be made with yogurt or sour cream in place of all or some of the mayonnaise if preferred.
