Carrot raisin salad can be made low fat by using fat-free or low-fat yogurt instead of mayonnaise. The salad recipe is easy to alter and can also be made with orange juice and brown sugar instead of dairy or oil for a refreshing citrus flavor.
To make a carrot salad using yogurt to replace mayonnaise, mix 1/2 cup of non-fat yogurt with 1 1/2 tablespoons of honey, 1/4 teaspoon of cinnamon and 1 tablespoon of lemon juice. The salad should be allowed to sit for a while so that the sugar can fully dissolve and the carrots can pick up the citrus flavor.
