How Long Should You Smoke Turkey Legs?

It is recommended that turkey legs should be smoked for 4 to 5 hours. Turkey legs are also relatively lean so it is a good idea to treat the turkey legs with a brine solution to help keep them tender and moist even after smoking.

The following is a simple turkey legs recipe with a four to five-hour smoking time.

Brine Mix:

  • 8 turkey legs
  • 2 tablespoons onion powder
  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 1 tablespoon ground pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon ground cumin
  • 1 cup kosher salt
  • 1/2 cup sugar
  • 1 gallon water

  • 3 tablespoons onion powder
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon ground pepper
  • 1 teaspoon ground cumin

Mix the ingredients for the brine solution in a pan, set on a stove and bring to a boil. Set aside and let it cool down to room temperature before adding the turkey legs. Put the pan in the refrigerator for around four to five hours.

Take the turkey out of the brine solution then pat dry. Combine the rub ingredients thoroughly and then coat the legs with the rub.

Put the legs inside the smoker once the temperature reaches 225 to 240 degrees Fahrenheit. Smoke the legs for four to five hours or until the internal temperature of the legs reaches 165 degrees Fahrenheit. Let the meat rest for at least 20 minutes before serving.
