The amount of time scallops stay fresh depends on a number of factors, such as whether the scallops are shucked or still in the shell; for example, fresh shucked scallops can stay fresh in the refrigerator for up to four days. Live mollusks like scallops can be kept in a 34-38 degree Fahrenheit refrigerator for up to 10 days.
Shucked scallops should be kept in a flat tray that allows them to spread out. Line the bottom of the tray, add the scallops and then top with ice. Keep the scallops in ice until ready to use. Fresh scallops can also be stored in frozen water inside resealable plastic bags for as long as six months at 0 degrees Fahrenheit.
