The procedure for making Bearnaise sauce is very similar to making Hollandaise sauce. Bearnaise is an emulsified sauce where clarified butter is whisked into egg yolks with other flavoring ingredients. These ingredients include shallots, tarragon, parsley, salt and wine vinegar. Other ingredients include lemon juice, cayenne pepper and crushed black peppercorns. Bearnaise sauce works great on many dishes and is a great choice to put on fish, but also works well with a grilled steak or for breakfast on eggs.
