Chicken livers need to be cooked for about five minutes. Once chicken livers have reached 70 C (158 F) for two minutes, they are done. Use a food thermometer to make sure the thickest portions are completely cooked.
It is important to make sure livers are thoroughly cooked before eating because raw livers contain campylobacter bacteria that can make you very ill. Thoroughly cooking chicken livers kills bacteria, ensuring the livers are safe to eat. Do not use the same cutting board or dish for cooked livers that raw livers came in contact with, as this can contaminate the cooked portions.
