Carbohydrates stored in the body are called glycogen. The majority of glycogen storage in a human body occurs in the liver and muscles, although lesser amounts are present in the bloodstream. Muscle glycogen levels affect the duration and intensity of exercise; low levels reduce the time that a person may exercise at maximum capacity.
All carbohydrates are not of equal nutritional value, states Donna Logan, a registered dietitian at the University of Texas Medical School in Houston. The best carbohydrates constitute high levels of fiber, as reported by the U.S. Department of Agriculture's dietary guidelines. Examples of carbohydrates with high fiber content include vegetables, fruits and whole grains.
