Lima beans are a healthy food. Whether fresh or dried lima beans are chosen, the beans are a good source of protein as well as other vitamins and minerals.
There are two types of lima bean varieties: large and small. The smaller type yields baby lima beans or butter beans. Smaller beans grow on a bush, whereas larger beans grow on a vine and are known as lima beans. Both types of beans have a buttery texture and a sweet flavor.
Lima beans of all varieties also provide fiber and are an excellent source of folate, vitamin B12, vitamin B6, thiamin, calcium, iron and copper.
