Broccoli scalloped potatoes is a leftover ham recipe that combines vegetables, ham, cheese and garlic. Asparagus strata with cheese is another recipe that is great for using leftover ham to make a hearty brunch or breakfast dish.
To begin making broccoli scalloped potatoes, first melt 1/4 cube of butter. Next add 4 cloves of garlic and 2 tablespoons of chopped onion and cook until tender. Stir in 5 tablespoons of all-purpose flour, 1/4 teaspoon white pepper and 1/8 teaspoon of salt. Whisk in 2 1/2 cups of whole milk and bring ingredients to a boil while stirring. Cook for 2 minutes or until thickened. Stir in 1 cup of Swiss cheese and reduce heat until the cheese melts. Stir in 2 pounds of peeled, sliced potatoes, 2 cups of cooked, sliced ham and 2 cups of broccoli florets. Bake the mixture in a covered dish for 40 minutes at 350 degrees Fahrenheit, sprinkle extra cheese on top, and then bake uncovered for an additional 20 to 25 minutes.
To start making asparagus strata with cheese, first place bread with the crusts removed into a buttered baking pan. Place a slice of cheese, asparagus pieces and ham onto each piece of bread. Then top with another slice of bread. Pour a mixture of 4 eggs, 2 cups of milk, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and 1/2 teaspoon of dry mustard over the bread. Refrigerate overnight, and sprinkle with shredded cheese before baking at 350 F for 40 to 50 minutes.
