Two Kolacky cookie recipes are AllRecipe.com's Cream Cheese Kolacky and Sophie's Kolacky. Both use similar ingredients with a few variations. The Cream Cheese Kolacky recipe makes 30 cookies, while Sophie's Kolacky recipe makes 18 cookies.
To make Cream Cheese Kolacky, combine 3 ounces of cream cheese and 1/2 cup softened butter. Slowly add in 1 cup of flour. Form the dough into a ball, and place it in the refrigerator for a few hours or overnight.
Next, on a floured board, roll out the dough until it is 1/8 of an inch thick. Cut the dough into 2 1/2-inch squares, and top each square with 1/2 teaspoon of any flavor fruit jam. Bring opposite corners of the square into the center, and overlap them.
Bake the cookies on cookie sheets for 10 to 12 minutes at 350 F. When finished, dust with confectioner's sugar.
For Sophie's Kolacky, use a pastry blender to combine 1 cup butter and 6 ounces softened cream cheese. Meanwhile, mix together 2 cups flour, 2 tablespoons sugar, 2 teaspoons baking powder and a pinch of salt. Add the dry ingredients to the cream cheese mixture, and knead into a stiff dough. Using a cookie cutter, cut the dough into 3-inch circles. Use your thumb to make a depression in the center of the cookie, and place 1/2 teaspoon of apple-pie filling in each.
Bake the cookies for 20 minutes at 350 F, and then dust with confectioner's sugar.
