To make the crust, combine 1 teaspoon of sugar and salt with 2 1/2 cups of flour, and beat in 2 sticks of cold butter and 1/3 cup of ice water. Chill the dough, roll it out, and place it over a pie pan. Bake at 350 degrees Fahrenheit for 15 minutes.
Meanwhile, make the batter by combining 1 1/2 cups of pumpkin, 1/2 cup of sugar, 1 1/2 ounces of melted butter, 1/2 cup of whole milk and 1/4 cup of maple syrup. Season with 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground cloves and 1/2 teaspoon of ground nutmeg. Mix in three eggs, one at a time, and add 1/4 cup of heavy cream. Pour the batter into the pie shell, bake at 425 degrees for 10 minutes, and bake for another 40 minutes at 350 degrees. Toss 1 cup of chopped pecans with 2 teaspoons of sugar, 2 teaspoons of dark corn syrup, 1/2 cup of brown sugar and 1 teaspoon of vanilla extract. Add the mixture to the top of the pie, and bake for another 11 minutes.
