In Chinese cooking, King Do fruit sauce is made from light and dark soy sauce, rice vinegar, sugar, salt, cornstarch and Worcestershire sauce. This sauce is a variation of Cantonese sauce versions and is best on spare ribs or belly pork cuts.
While King Do sauce does have a fruity flavor, it does not contain any fruit. The tangy taste comes from the Worcestershire sauce used. Some recipes do call for fruit to be added, but this does not affect the King Do sauce taste.
There are many variations on the King Do sauce. Some recipes call for oyster sauce, Chinese cooking wine or ketchup; others use dry sherry wine, sesame oil and chili sauce to get the tangy flavor.
