It is possible to make chocolate brownie cookies using a packaged brownie mix. This recipe uses only one egg to keep the brownie cookies from rising too much. Conversely, an extra egg can be added to a standard brownie mix to make brownies that are more cake-like.
When short on eggs, just turn that brownie mix into gooey, chocolate brownie cookies. Mix-ins like chocolate chips or nuts help make the cookies extra special.

- 1 box, brownie mix
- 1 count, large egg
- 2 tbsp. water
- 1/3 cup vegetable oil
- 3/4 cup, mix-ins; chocolate, butterscotch or peanut butter chips; nuts
Step 1: Stir the brownie mix with egg, oil and water until well mixed. Stir in the mix-ins at this point.
Step 2: Drop spoonfuls of the cookie dough onto a greased baking sheet. Space the spoonfuls about 2-inches apart to give the dough plenty of room to spread out and cook.
Step 3: Bake the brownie cookies in an oven pre-heated to 375 degrees F for 7 to 8 minutes, or until the center of the cookies starts to firm up. Remove from the oven and allow the cookies to cool on the sheet for 1 minute before transferring to a wire rack to cool further.
