Potato kielbasa skillet and kielbasa in Polish sauce are both good kielbasa dinner recipes. The potato kielbasa is perfect for those cold late fall and early winter nights.
To make potato kielbasa skillet for four, put 1 pound red potatoes into a microwave safe dish and add 1/4 cup water. Cover it and microwave for four minutes, until tender; drain. Put 3/4 pound smoked kielbasa cut into 1/4 inches slices into a large skillet. Sauté the kielbasa and 1/2 cup chopped onion using 1 tablespoon olive oil. When the onion is tender, add potatoes, and saute for five minutes until the Kielbasa and potatoes turn light brown. Mix 2 tablespoons cider vinegar, 2 tablespoons brown sugar, 1 tablespoon Dijon mustard, 1/2 teaspoon dried thyme, 1/4 teaspoon pepper, and stir into a skillet. Simmer for three minutes, add 4 cups fresh baby spinach, and 5 cooked and crumbled bacon strips. Cook and stir until spinach is wilted.
For Kielbasa in Polish Sauce, mix 12 ounces light beer, 1 1/2 cups water 2 cups chopped yellow onions and 2 pounds Kielbasa sausage. Season with black pepper and salt. Let it boil, and reduce to a simmer and cook for 25 minutes while covered. Slice 2 pounds Kielbasa sausage into 1-inch pieces. In a large saute pan, melt 2 tablespoons butter over medium heat, stir in the flour, and cook for six minutes until it turns light brown. Stir in 1 tablespoon sugar, 2 tablespoons white vinegar and remaining beer and onion mixture and season. Let it boil, and then simmer and cook for 25 minutes. Add the sliced sausages and cook for five minutes. Garnish with 2 tablespoons finely chopped parsley.
