The official Red Lobster website does not include shrimp scampi along with their posted recipes. However, a popular copycat recipe for Red Lobster Shrimp Scampi includes the key ingredients shrimp, garlic, olive oil and white wine.
Portions for the key ingredients include 1 pound of peeled and deveined medium shrimp, 1 tablespoon of olive oil, 2 tablespoons of finely chopped garlic, and 1 1/2 cups of chardonnay or other white wine. Additional ingredients include the juice from half of a fresh lemon, 1 teaspoon of Italian seasoning, 1/2 cup of softened butter, 1 tablespoon of parsley and a 1/2 cup of grated or shredded Parmesan cheese.
To prepare the shrimp scampi, heat the olive oil in a cast iron skillet, then sauté the shrimp in the hot pan until no longer translucent. Remove the shrimp to a plate, and reduce the heat in the pan to medium. Next, sauté the garlic until fragrant, being careful not to let the garlic brown. Add the wine and lemon juice, and cook until the wine reduces by half. Once reduced, add the Italian seasoning, and turn the heat down to low. When the heat is reduced, add the butter and incorporate. Mix the shrimp back into the sauce, and top with parsley, salt and pepper and Parmesan cheese.
