The main ingredients for a sausage and peppers recipe are either sweet or hot Italian sausage and different colors of sliced bell peppers. Other important ingredients are minced garlic, minced onion, herbs and red wine.
To make a basic sausage and peppers recipe, roast and slice 2 red peppers and 2 yellow peppers. Saute these with the minced onion and 1 dried ancho chile. Add salt and pepper to taste, and mix in the minced garlic, 8 torn basil leaves and 1 teaspoon minced fresh oregano.
Use a fork to prick the skin of 2 pounds of either sweet or hot Italian sausage. Add 2 cups of wine, and mix in the sautéed vegetables and 28 ounces of crushed tomatoes. Cover the pan part way, and simmer for 20 minutes. Slice the sausages into 1-inch pieces, and serve with the vegetables.
To make sausage and pepper sandwiches, cook the sausages separately in water. After 10 minutes, drain the water and brown the casings in hot oil in the skillet. Cut the sausages into 2-inch pieces at an angle, and sear the cut edges. Cook the peppers as above, but omit the tomatoes.
Split and toast sandwich rolls. Meanwhile, melt butter with olive oil in a small pan. Add whole garlic, and let it sizzle. Brush the rolls with the garlic butter. Layer the sausages with cooked peppers onto the rolls.
