To make a clone of KFC’s coleslaw, mix 8 cups of finely chopped cabbage, 1/4 cup of shredded carrots and 2 tablespoons of minced onion. Chop the carrots and cabbage to the consistency of rice. Combine 1/2 cup of mayonnaise, 1/3 cup granulated sugar, and 1/4 cup each of milk and buttermilk in a large bowl. Add 2 1/2 tablespoons of lemon juice, 1 1/2 teaspoons white vinegar, 1/2 teaspoon salt and 1/8 teaspoon pepper. Beat the mixture until smooth. Fold in the chopped cabbage, carrots and onions. Mix well to coat the chopped ingredients. Cover the coleslaw, and refrigerate it for at least two hours prior to serving.
Another copycat recipe for KFC’s coleslaw comes from MomOnTimeOut.com. This version calls for whisking together 1/2 cup mayonnaise, 1/4 cup buttermilk, 1 1/2 tablespoons apple cider vinegar, 2 tablespoons lemon juice and 1/3 cup of sugar in a large bowl. Also add 1/2 teaspoon each salt and celery seed and 1/8 teaspoon celery seed. Mix well, and then fold in 16 ounces of shredded, bagged coleslaw mix. This recipe serves eight people.
