Jerky recipes for venison include Alton Brown's Jerky from the Food Network, Island Cowboy Jerky and Whiskey Deer Jerky. To make Whiskey Deer Jerky, you need corn whiskey, Worcestershire sauce, soy sauce and garlic, as well as salt and pepper.
Make Alton Brown's Jerky by thinly slicing 2 pounds of frozen venison. Combine 2/3 cup of Worcestershire sauce and 2/3 cup of soy sauce with 1 teaspoon of liquid smoke, 1 tablespoon of honey, 1 teaspoon of onion powder, 2 teaspoons of black pepper and 1 teaspoon of red pepper flakes. Pour the mixture into a plastic bag with the sliced venison, and chill it for up to six hours. Arrange the meat on cooling racks until it dries, and then place it in a food dryer for 12 hours or on oven racks heated to the lowest possible temperature.
To make Whiskey Deer Jerky, trim the fat, and cut 2 pounds of venison into thin pieces. Add the meat along with 1 cup of water, 1 cup of corn whiskey, 2 tablespoons of Worcestershire sauce and 2 tablespoons of soy sauce. Season the mixture with 1 tablespoon of salt, 1 teaspoon of ground red pepper and 2 sliced garlic cloves. Marinate the meat for one hour, and place it in a dehydrator or smoker until done.
