Make Alton Brown's Jerky by thinly slicing 2 pounds of frozen venison. Combine 2/3 cup of Worcestershire sauce and 2/3 cup of soy sauce with 1 teaspoon of liquid smoke, 1 tablespoon of honey, 1 teaspoon of onion powder, 2 teaspoons of black pepper and 1 teaspoon of red pepper flakes. Pour the mixture into a plastic bag with the sliced venison, and chill it for up to six hours. Arrange the meat on cooling racks until it dries, and then place it in a food dryer for 12 hours or on oven racks heated to the lowest possible temperature.
To make Whiskey Deer Jerky, trim the fat, and cut 2 pounds of venison into thin pieces. Add the meat along with 1 cup of water, 1 cup of corn whiskey, 2 tablespoons of Worcestershire sauce and 2 tablespoons of soy sauce. Season the mixture with 1 tablespoon of salt, 1 teaspoon of ground red pepper and 2 sliced garlic cloves.
