Irish bacon, also called back bacon or rashers, is a traditional cut from the British Isles featuring cured, unsmoked bacon sliced to include the pork loin as well as part of the belly. Back bacon is similar to Canadian bacon, but it has a layer of fat around the meat.
In Australia, back bacon is known as middle bacon, and in Ireland and Britain it's simply known as bacon. Canadian bacon is made only from the lean part of the loin, but strip bacon is known simply as bacon in Canada. Canadian bacon usually comes precooked and ready to eat.
