The beef and mango salad starts by preparing a marinade for 1 pound of New York strip steak. The marinade includes 1/2 cup peanut butter spread, 4 cloves of minced garlic, 1 tablespoon of grated ginger root, 2 tablespoons of lime zest, and 2/3 cup lime juice. Combine the ingredients well. Cut the steak into thin slices. Add the steaks to the marinade, and mix them. Cook the steaks for one to two minutes on each slide over medium heat.
The salad includes mango slices, 1/2 cup of sliced red onion and baby romaine lettuce leaves. Arrange the lettuce leaves, onion, mango slices and steak evenly on four plates.
