Ingredients used in a recipe for almond paste marzipan are almond paste, powdered sugar and egg whites. Almond paste is a mixture of ground almonds, egg whites and sugar and is either purchased or made from scratch.
Chop 1 pound of almond paste into quarter-sized pieces. Place the pieces into the bowl of a large stand mixer. Add 3 cups of sifted powdered sugar to the bowl, and turn the machine to low. Blend the almond paste and the sugar until they are well-blended and have a sandy texture. Slowly add 2 beaten egg whites, a little at a time, until the mixture forms a ball. It is possible to end up with leftover egg whites.
Lightly sprinkle a work surface with powdered sugar, and knead the marzipan until it has a smooth texture. Cover the marzipan with plastic wrap, and refrigerate it for up to 3 months, or freeze it for up to 6 months. To make your own almond paste for use in almond paste marzipan, process 1 1/2 cups of blanched almonds in a food processor. Add 1 1/2 cups of confectioner's sugar, 1 egg white, 1 1/2 teaspoons of almond extract and 1/4 teaspoon of salt. Process all of the ingredients together, and process until the mixture is smooth.
