These aromatics help give breakfast sausage its characteristic smell when being cooked. Other spices such as garlic, black pepper, cayenne pepper and salt give breakfast sausage heat and spicy flavor. The amounts of these spices used can vary by recipe and taste preference. Usually they range from 1/2 teaspoon to 1 teaspoon of each herb or spice per pound of pork.
