Ingredients for a classic Reuben sandwich include 2 tablespoons butter, 2 slices rye bread, 1/4 cup Thousand Island dressing, 4 thin slices cooked corned beef, 3 tablespoons sauerkraut and 2 slices Swiss cheese. An alternative Rueben sandwich recipe uses canola mayonnaise mixed with Worcestershire and chili sauces.
To make a classic Reuben sandwich, butter a single side of each bread slice and place one slice on a flat surface with the buttered side facing down. Spread 2 tablespoons of the thousand island dressing on top of the bottom bread slice and top with slices of corned beef. Drain the sauerkraut and mix with a desired amount of optional caraway seeds and pile on top of the corned beef. Layer the two slices of Swiss cheese over the sauerkraut and spoon the remaining dressing on top. Place the second slice of rye bread over the entire sandwich, and brown each side of the sandwich for three minutes in a pan, cooking until cheese melts.
Make four spicy Reuben sandwiches using 8 slices rye bread, 3 ounces shaved Swiss cheese, 4 ounces of corned beef and 1 cup sauerkraut. In a bowl, combine 1/4 cup canola mayonnaise, 1 tablespoon chili sauce, 2 teaspoons minced dill pickle, 1 teaspoon Worcestershire sauce and 1/2 teaspoon grated onion. Toast bread slices in a broiler, melt cheese on four slices and top with dressing and remaining ingredients.
