Gently stir the buttermilk mixture into the flour mixture until blended. Avoid over-mixing the dough.
Spoon the cherries into a buttered round pie pan, and dollop the cobbler on top in small spoonfuls. Gently smooth out the dollops until the topping completely covers the cherries. Bake the cherry cobbler at 425 degrees Fahrenheit for 15 to 20 minutes. Once the cobbler has a golden top and is no longer doughy, remove it from the oven. Cool the cobbler just until it reaches room temperature, and serve it with vanilla ice cream on top if desired.
