Fresh or frozen strawberries can be used for a strawberry glaze, but for frozen berries, strain the excess water from the berries after they have thawed. If the glaze is too thin, whisk one tablespoon of cornstarch with three tablespoons of cold water, and add it to the mixture, which allows it to thicken up. Another way to thicken it is to keep it at a low heat for longer, cooking down the berries even further. If you want more texture to your glaze, macerate the strawberries in sugar, then mash them and cook them down without straining the mixture.
