Although refried bean dip ingredients vary by recipe, the fiesta refried bean dip by Rosarita calls for traditional refried beans, cooked bacon, diced tomatoes and green chilis, cream cheese spread, queso fresco and sliced green onions for garnish. The dip is served with tortilla chips.
To prepare Rosarita's refried bean dip, place five slices of cooked bacon in a wide skillet over medium heat, and saute them until crisp, around three to five minutes. Place the bacon on paper towels, and crumble the strips before setting them aside. Drain one 10-ounce can of diced green chilis and tomatoes, and add it to the skillet along with 2 tablespoons of cream cheese spread and one can of traditional refried beans. Heat the mixture for approximately five minutes, stirring constantly.
Spoon the mixture into a shallow dish, and top it with the bacon and 1/2 cup crumbled queso fresco. Top the dip with sliced green onions, and serve it alongside a bowl of tortilla chips. The recipe makes 24 2-tablespoon servings. Each serving has 2 grams of fat, 2 grams of protein and 35 calories. For a slight variation, add shredded Monterrey Jack and cheddar cheese for a cheesy bean dip, or substitute chunky salsa for the diced tomatoes and chilis.
