- 2 tbsp. butter
- 1 1/2 cups long grain rice
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- a garlic clove, minced
- 2 cups water
- 1 (14 1/2 oz.) can diced tomatoes with green chilis
- 1 tsp. chili powder
- 1 tsp. salt
- 1 cup cheddar cheese, shredded
- Melt butter
- Add rice
- Add tomatoes
- Bring to a boil
- Add cheese
Melt butter in a large sauce pan over medium heat.
Add the rice, onions, garlic and green bell peppers.
Allow the rice and vegetables to cook until the vegetables are softened and the rice is browned.
Stir in the canned tomatoes with green chilis, salt and chili powder. Stir to combine.
Bring the mixture to a boil and then reduce heat and allow to simmer for 15 to 17 minutes or until the rice is tender.
Gently stir the shredded cheddar cheese into to rice and serve while warm.
