Combine 1/2 cup shredded carrots, 1 1/3 cups applesauce, 1/2 cup vegetable oil and 1 teaspoon vanilla. Mix in two eggs and 1/4 cup granulated sugar. In another bowl, combine 2 1/4 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 1/3 teaspoon cinnamon and 1/2 teaspoon walnut pieces. Blend dry ingredients into the applesauce mixture, but do not overmix. Divide the mixture into two greased loaf pans, and bake in a preheated 350 degrees Fahrenheit oven for 55 minutes.
