The ingredients for an easy Italian bruschetta recipe include garlic, extra-virgin olive oil, tomatoes, basil and crusty loaf bread as well as salt to taste. Another easy recipe calls for Parmesan cheese and balsamic vinegar as well as the basic ingredients.
To make the Food Network's Bruschetta with Tomato and Basil, cut 1/2 crusty loaf of bread into 12 slices, and place them on a broiler pan. Briefly broil each side of the bread slices until they are toasted, and remove them from the heat. Rub 2 cracked garlic cloves over the toasted bread, and sprinkle them with extra-virgin olive oil to taste, reserving some for drizzling later. Combine 20 minced fresh basil leaves, coarse salt to taste, olive oil and 3 seeded and cut plum tomatoes in a bowl, tossing well. Spoon the tomato mixture onto the toasted bread slices.
Make Balsamic Bruschetta by combining 8 diced plum tomatoes, 1/3 cup of chopped fresh basil, 1/4 cup of shredded Parmesan cheese and 2 minced garlic cloves in a bowl. Toss the mixture with 1 tablespoon of balsamic vinegar, 1 teaspoon of olive oil, 1/4 teaspoon of kosher salt and 1/4 teaspoon of freshly ground black pepper, and spoon the bruschetta onto 1 loaf of sliced and toasted French bread.
