Combine 20 minced fresh basil leaves, coarse salt to taste, olive oil and 3 seeded and cut plum tomatoes in a bowl, tossing well. Spoon the tomato mixture onto the toasted bread slices.

Make Balsamic Bruschetta by combining 8 diced plum tomatoes, 1/3 cup of chopped fresh basil, 1/4 cup of shredded Parmesan cheese and 2 minced garlic cloves in a bowl. Toss the mixture with 1 tablespoon of balsamic vinegar, 1 teaspoon of olive oil, 1/4 teaspoon of kosher salt and 1/4 teaspoon of freshly ground black pepper, and spoon the bruschetta onto 1 loaf of sliced and toasted French bread.
