The ingredients needed to make a quick puff pastry recipe are unbleached, all-purpose flour, salt, water and unsalted butter. Pastry chefs also need a food processor, a rolling pin, plastic wrap and a suitable work surface, which can be covered in flour and used for rolling the dough.
To make puff pastry, cut two sticks of cold butter into small 1/4 to 1/2-inch chunks. Refrigerate the butter to keep it cold while preparing the rest of the ingredients. Dissolve 1 teaspoon salt into a 1/2 cup cold tap water, and set aside.
Coarsely chop another 4 tablespoons (1/2 stick) butter, and put it into the bowl of a food processor along with 2 cups unbleached, all-purpose flour. Use a metal blade attachment in the food processor, and pulse the flour and butter 10 to 12 times until the butter is absorbed into the flour.
Add the chopped butter and salt water, and pulse a few times to distribute the ingredients. Don't overwork the dough; just process it enough for it to form a rough ball. Scrape the dough onto a floured work surface, shape it into a rough rectangle, and place it between two large pieces of plastic wrap. While it is wrapped in plastic, roll the dough out to form a 12-inch to 18-inch rectangle.
Peel away the plastic, fold the top of the dough down and the bottom up to make a 6-by-18-inch rectangle. Then, roll the dough from one end to the other into a square, wrap snugly in plastic wrap, and refrigerate until firm for at least one hour.
