Depending on the recipe, some ingredients in a homemade fondant recipe include sugar, water and corn syrup. Another recipe calls for confectioners' sugar, gelatin, glucose, glycerine and cornstarch.
To make a basic fondant recipe, dissolve 2 cups of water in 1 cup of sugar in a saucepan at medium heat, and then stir in 2 tablespoons of corn syrup. Bring the mixture to a boil until it reaches between 234 and 240 degrees Fahrenheit, forming a soft, thick texture. Pour the mixture on a hard surface, sprinkle water over the top, and allow it to cool for only a few minutes before working it together using a spatula. Once it turns stiff, work it by hand until it turns smooth, and refrigerate it in an airtight container.
Make another fondant recipe by sifting 2 pounds of confectioners' sugar into a bowl and creating a dip in the middle. Heat 1/4 cup of cold water at medium heat, and add 1 tablespoon of unflavored gelatin until it dissolves. Remove the pan from the heat, and add 1/2 cup of glucose or white corn syrup, 1 1/2 tablespoons of glycerine and 1 teaspoon of flavoring, such as vanilla or almond extract. Pour the mixture into the powdered sugar, and stir everything together. Once the ingredients are combined, knead the fondant by hand, and cover it with plastic wrap.
