A Greek salad dressing typically includes red wine vinegar, oregano, garlic cloves, olive oil and salt. Depending on the recipe some other ingredients are lemon juice, basil, marjoram and Dijon mustard.
To make a Greek salad dressing, whisk together 1/2 cup of red wine vinegar, 3 minced garlic cloves, 1 tablespoon of fresh chopped basil, 1 teaspoon of fresh chopped oregano and 1/2 teaspoon of dried marjoram. Mix in 3 tablespoons of lemon juice and 3/4 cup of olive oil, and season the vinaigrette with salt and freshly ground pepper to taste.
Make another vinaigrette by combining 2 minced garlic cloves, 1 teaspoon each of dried oregano and kosher salt, 1/2 teaspoon each of Dijon mustard and freshly ground black pepper, and 1/4 cup of red wine vinegar. Gradually whisk in 1/2 cup of good olive oil until the mixture is thoroughly blended, and allow the dressing to sit for 30 minutes before serving.
Instead of red wine vinegar, use balsamic vinegar by adding 2 tablespoons of it to a blender, along with 1 quartered garlic clove, 1/4 teaspoon of crushed red pepper flakes, 1/2 teaspoon of salt and 1/8 teaspoon of black pepper. Pour in 3/4 cup of olive oil until the dressing is emulsified.
