The ingredients and their measurements are as follows: half a cup of olive oil; one small onion; two cloves of garlic, one stalk of celery and one carrot, all chopped; sea salt and freshly ground black pepper; two 32-ounce cans of crushed tomatoes; four to six basil leaves; two bay leaves and up to 4 optional tablespoons of unsalted butter to even out the sauce's taste.
The ingredients for this simple sauce are mixed together in a large casserole pot. Starting with heating the oil, ingredients are added to sauté, starting with the onion and the garlic. Next is the celery and carrots, seasoned with salt and pepper. The vegetables are done when they are softened.
Finally, the tomatoes, basil and bay leaves are added, and the whole mixture is then simmered covered for about an hour. Mixing in the butter comes last, when taste testing the sauce.
