- 1 1/2 lbs. boneless skinless chicken breasts, cut into three pieces
- 5 tablespoons butter, divided
- 2 tablespoons olive oil
- 3/4 cup onion, chopped
- 1 lb. cremini mushrooms, sliced
- 1 cup Marsala wine, dry
- 1 cup Mascarpone cheese
- 2 tablespoons garlic, minced
- 2 tablespoons Dijon mustard
- Salt, to taste

- 2 tablespoons chopped parsley
- 12 ounces fettuccine
