Easy Shortbread Cookies
This recipe is for basic shortbread cookies. To make chai spice tea shortbread cookies, mix 2 tablespoons of loose chai tea with the flour and blend in a food processor.

- 2 cups, all-purpose flour
- 1 teaspoon, pure vanilla extract
- 1/2 cup, confectioners' sugar
- 1 cup, unsalted butter
- Preheat the oven
- Blend the dough
- Refrigerate the dough
Preheat the oven to 375 degrees Fahrenheit.
In a food processor, pulse together the confectioners' sugar, flour and salt. Pulse in the butter and vanilla until the dough starts to form, adding up to 1 teaspoon of water if necessary.
Remove the dough from the food processor and place onto a piece of plastic wrap. Roll the dough into a log roughly 5 inches long and 2-1/2 inches in diameter. Wrap the plastic wrap tightly around the dough and refrigerate for 30 minutes.
Remove the dough from the plastic wrap and slice into 1/3-inch cookies. Place on a nonstick baking sheet and bake for 12 to 14 minutes until the edges are light brown. Cool for 5 minutes and then transfer to a wire rack.
