To make the banana muffins, combine 1 1/2 cups whole wheat flour, 1/2 cup muscovado sugar, 1 teaspoon baking powder, 3/4 teaspoons baking soda and 1/2 teaspoon salt in large bowl. Combine 2 large eggs and 1/4 cup milk in a separate bowl and stir in 1 1/3 cups mashed bananas, 1/3 cup unsweetened applesauce and 1 teaspoon vanilla extract. Stir the banana mixture into the dry ingredients. Place paper muffin cups in a muffin tin, and fill each three-quarters full. Bake for 20 minutes at 375 degrees Fahrenheit. This recipe makes 12 muffins.
To make an all American meatloaf, chop 1 cup onions, 1/2 cup bell pepper, 1 celery stalk, 3 tablespoons parsley and 2 cloves garlic. Mix the onions, bell pepper, celery, parsley, garlic, 1 teaspoon black pepper, 3/4 cup oats and 2 large egg whites in a bowl. Crumble 1 1/2 pounds ground beef over the onion mixture and mix well. Place the mixture into a loaf pan lined coated with cooking spray. Brush 1/4 cup ketchup over the top of loaf. Bake for one hour at 350 degrees Fahrenheit, and let loaf cool 10 minutes before serving. This recipe makes six servings.
