To make the banana muffins, combine 1 1/2 cups whole wheat flour, 1/2 cup muscovado sugar, 1 teaspoon baking powder, 3/4 teaspoons baking soda and 1/2 teaspoon salt in large bowl. Combine 2 large eggs and 1/4 cup milk in a separate bowl and stir in 1 1/3 cups mashed bananas, 1/3 cup unsweetened applesauce and 1 teaspoon vanilla extract. Stir the banana mixture into the dry ingredients. Place paper muffin cups in a muffin tin, and fill each three-quarters full. Bake for 20 minutes at 375 degrees Fahrenheit. This recipe makes 12 muffins.
To make an all American meatloaf, chop 1 cup onions, 1/2 cup bell pepper, 1 celery stalk, 3 tablespoons parsley and 2 cloves garlic. Mix the onions, bell pepper, celery, parsley, garlic, 1 teaspoon black pepper, 3/4 cup oats and 2 large egg whites in a bowl. Crumble 1 1/2 pounds ground beef over the onion mixture and mix well. Place the mixture into a loaf pan lined coated with cooking spray. Brush 1/4 cup ketchup over the top of loaf. Bake for one hour at 350 degrees Fahrenheit, and let loaf cool 10 minutes before serving. This recipe makes six servings.Learn more about Vegetables
