You can also use roast beef to make a Moroccan-style stew. It requires olive oil, 1 tablespoon of butter, 2 finely-chopped onions, 2 finely-chopped garlic cloves and 14 ounces of rinsed and drained chickpeas. The recipe also requires 14 ounces of chopped tomatoes, 1/4 teaspoon of black pepper, 1 teaspoon of ground turmeric 1/2 teaspoon of ground ginger. Further, you need 1 teaspoon of ground cinnamon, the juice of 1 lime or lemon, 15 ounces of either chicken stock or vegetable stock and 1 teaspoon of salt. The final ingredients are 1 finely-chopped bunch of parsley or cilantro, 2 teaspoons of mint, 1 teaspoon of paprika, some leftover roast beef and 1/4 teaspoon of cayenne pepper.
Heat the butter and oil in a saucepan. Add the onion, fry it for 10 minutes, and add the garlic. Stir the onions and garlic together. Stir in the tomatoes and chickpeas. Next, add turmeric, ginger, pepper, cinnamon and lemon juice. Next, add half of the salt and all of the stock. Boil the liquid until it reduces.
