Some recipes for party buffet food include garlic and basil roast beef sandwiches and vegetarian party buffet sandwiches. To make the roast beef sandwiches, slice 1 loaf of French bread. Toast the slices until they are lightly golden.
Roast 12 cloves of garlic, and then cool and peel them. Mash the garlic with 2 tablespoons of olive oil to create a paste. Coat half of the bread slices with the garlic. Top those slices with 1 pound of sliced roast beef, 1 bundle of fresh basil, 2 large sliced tomatoes and 8 ounces of fresh mozzarella.
Drizzle balsamic vinegar over the fillings, and top them with the remaining slices of bread. Skewer the sandwiches with toothpicks, and cut them into quarters to serve.
For a vegetarian option, heat 4 minced cloves of garlic in 1 tablespoon of extra virgin olive oil until fragrant. Combine 2/3 cup of mayonnaise, 2 tablespoons of finely minced green onions and 1 tablespoon of freshly squeezed lemon juice. Mix in the heated garlic, and spread the mixture onto slices of rosemary ciabatta bread.
Top the spread with 1 cup of fresh spinach leaves, 2 sliced beefsteak tomatoes, 1 sliced red onion, and thin slices of Havarti cheese. Top the fillings with the remaining slices of bread, and skewer the sandwiches with toothpicks to serve.
