To make shrink-me fries, first clean about 9 ounces of potatoes. Peel the potatoes if desired, and cut into uniform fry shapes. If using a paddle-type air fryer, put the potatoes and 1 teaspoon of duck fat into the pan, and cook for 30 minutes. If using a basket-type fryer, melt the duck fat in the microwave for 10 to 15 seconds. Pour over the fries, and toss until coated. Then place the coated fries in the fryer basket, and cook for 20 to 25 minutes, tossing after 10 or 15 minutes.
For Pineapple Honey and Coconut, preheat the air fryer to 390 degrees Fahrenheit. Line the bottom of the basket with parchment. Cut half a pineapple into eight segments, removing the skin and core. In a bowl, mix 1 tablespoon honey with 1/2 tablespoon lime juice. Brush each pineapple section with the honey and lime mixture before placing it in the basket. Sprinkle with shredded dried coconut. Cook for about 12 minutes or until the pineapple is golden brown. Serve warm with vanilla ice cream.
