Add 1/2 cup of sour cream and 3 tablespoons of Parmesan cheese. Mash until the mixture is thoroughly blended.
To make garlic mashed potatoes, quarter 3 pounds of red potatoes and place them in a slow cooker. Add 4 chopped garlic cloves, 2 tablespoons of olive oil, 1 teaspoon of salt and 1/2 cup of water. Mix well, and cook on high until the potatoes are tender. Mash the mixture and stir in 1/2 cup of chives and onion cream cheese. Add enough milk for a soft consistency.
