Some homemade mashed potato recipes are Parmesan mashed potatoes, garlic mashed potatoes and buttermilk mashed potatoes. These recipes use a variety of cooking methods, including boiling, slow-cooking and microwaving.
To make Parmesan mashed potatoes, place 2 pounds of red potatoes cut into 1/2-inch chunks in a saucepan with 1 cup of chicken broth. Bring to a boil, cover and cook for 15 minutes, stirring after eight minutes. Uncover and simmer for five to six minutes. Add 4 ounces of cubed Neufchatel cheese, and mash until the cheese melts. Add 1/2 cup of sour cream and 3 tablespoons of Parmesan cheese. Mash until the mixture is thoroughly blended.
To make garlic mashed potatoes, quarter 3 pounds of red potatoes and place them in a slow cooker. Add 4 chopped garlic cloves, 2 tablespoons of olive oil, 1 teaspoon of salt and 1/2 cup of water. Mix well, and cook on high until the potatoes are tender. Mash the mixture and stir in 1/2 cup of chives and onion cream cheese. Add enough milk for a soft consistency.
To make buttermilk mashed potatoes, scrub and place 1 pound of red potatoes in a single layer in a microwave safe dish. Cover with plastic wrap and vent the top to allow steam to escape. Microwave on high for eight minutes, then add 1 cup of buttermilk, 3 tablespoons of butter, 1/2 cup of Parmesan cheese, 1/4 teaspoon of garlic powder, 1/4 teaspoon of salt and 1/8 teaspoon of pepper. Mash until the desired consistency is achieved.
