Home made key lime cake does not need to be refrigerated and may be stored at room temperature for several days. If, however, the cake is being stored in a room that is hot, store it in the refrigerator to avoid bacterial growth.
Cakes with and without frosting, cut and uncut, can be stored at room temperature. Cover the cake with plastic wrap or a cake keeper, or store it in the microwave to protect it from dust. If a key lime cake is going to be served more than three days from when it is baked, place it in the refrigerator to make it last longer.
