To make the turkey gravy with pears, skim the fat off the drippings left by a roast turkey, but reserve 1/4 cup of the fat. Measure 2/3 cup of the pan juices. Melt 1/2 cup of butter and the reserved fat in a heavy saucepan over medium heat. Mix in 1/2 cup all purpose flour and whisk until it's light brown. Add 2 cups of chicken broth, 1 cup of pear juice and the 2/3 cup of pan juices. Simmer until it's thickened, stirring constantly. Add 2 tablespoons of dark rum, stir, then season with salt and pepper.

The ingredients are a 12-ounce tube of bulk pork sausage, 2 tablespoons of all purpose flour, 2 cups of milk and freshly ground black pepper to taste. To prepare, heat a large, cast-iron frying pan over medium heat. Add the sausage and crumble it with a fork or a wooden spoon until it's thoroughly cooked and well browned. Remove the sausage to a bowl with a slotted spoon or a spider, but leave the fat in the pan. Whisk the flour into the fat and cook for about a minute. Pour the milk into the pan while whisking and bring to a boil. Lower the heat and simmer for about two minutes. Return the sausage to the pan and season with pepper.
