Chicken soup recipes are easy and only take a couple of hours to prepare. They require ingredients such as chicken, carrots, chicken stock and egg noodles, and when complete make the perfect comfort food. People with a cold or the flu also frequently eat this simple, homey soup.
Real Simple's classic Chicken Soup calls for a whole chicken up to 4 pounds, 4 stalks of celery, 6 peeled carrots, 1 yellow onion cut into quarters, kosher salt and whole black peppercorns. Place the chicken into a pot, cut up half the carrots and celery, and add them with the chicken along with the salt and peppercorns. Cover the mixture with cold water and bring to a boil. Cook on reduced heat for 30 minutes, strain the broth and pour it back into the pot as the chicken cools. Add the remaining vegetables, simmer for 10 minutes, then shred the chicken and add to the broth.
All Recipes offers a simpler version that calls for 4 cans of chicken broth, 1 can vegetable broth and 1/2 a pound of cooked, chopped chicken breast. Melt some butter and saute 1/2 cup each of onion and celery, then add the chicken, vegetables, and 1 1/2 cups egg noodles and with 1/2 teaspoon each of dried basil and oregano. Bring the soup to a boil, then reduce the heat and allow the soup to simmer for 20 minutes.
